Matcha Ceremony Set with Speckled Ceramic Bowl, Bamboo Whisk and Sifter

A five-piece matcha set built around a speckled ceramic bowl with a pouring spout. Alongside it come a bamboo whisk and the stand it dries on, a bamboo scoop, and a steel sifter that rests across the rim, which is everything that sits between the tin of powder and the cup.

No lumps at the bottom of the mug. No whisk crushed flat in a drawer. Sift, whisk, pour.

Most bad matcha goes wrong before the water goes in

You already know the method: sift the powder, add hot water, and whisk until the top turns to foam. Most people skip the first step because there is nothing to sift it through, and the result is a green drink with dark lumps that no amount of whisking will break up. Matcha is ground so fine that it packs together in the tin, and it goes into water far more smoothly once it has been pushed through mesh.

That is the sifter's whole job. A small round cup of fine steel mesh sits at the end of a long wire handle, and a little wire hook on the far side of its rim lets it sit across the bowl on its own. Tip a scoop of powder in, tap the handle, and it falls through into the bowl as a fine green dust.

The pieces cheap kits leave out are the ones that matter

The cheapest matcha kits are a whisk, a scoop and a plain bowl, and two things are usually missing. There is no sifter, so you are back to lumps. There is no stand either, so the whisk goes back in a box or a drawer while it is still damp, and its fine tines slowly bend out of shape.

This set includes both. The stand is glazed ceramic in the same color as the bowl, and the whisk rests on it head-down between uses so the tines dry the way they were made. On the counter the two read as a pair rather than a bowl with an accessory beside it.

A spout means you whisk and pour from the same bowl

The bowl is round and a little over five inches across, with a short pinched spout on one side of the rim and a low foot underneath. Whisk the matcha in it, then tip it and pour straight into a cup, or over a glass of milk and ice, without ladling it out or running it down the side.

The outside is carved with rows of shallow oval facets, and the glaze gathers in them and breaks to brown along their edges. It is glossy and speckled all over. The speckle falls differently on every bowl, so the one you receive will not match the photographs spot for spot. That is what a glaze like this does.

Five glazes, and the right one depends on where it lives

Yellow is a deep mustard with dark flecks, and it looks warmest on a wooden table. Green is an olive moss, the closest of the five to the color of the matcha itself. Red is a glossy brick red, Blue is a pale gray-blue with a hint of green in it, and White is a speckled off-white that breaks to brown along the carving.

Only the bowl and its matching stand change color. The whisk, the scoop and the sifter are the same in all five. Whichever one you choose, the whole set lives on the counter, and the lumps stay in the sifter.
