You already know what uneven slices cost you. The thin potatoes catch and burn while the thick ones underneath are still hard, and the dish you serve is a compromise you never chose. Set this to 3 mm and every slice off the board is 3 mm, from the first one to the last.

It was never your knife. It was your wrist.

You can be good with a knife and still not cut forty identical rounds of potato. Your hand tires, your slices drift thicker across the board, and no amount of practice fixes that — it is repetition, not skill.

A food processor gives you consistency and takes it straight back out again: the bowl, the lid, the disc, the pusher, and eight minutes of dishes for a job that took ninety seconds. A cheap plastic slicer gives you one thickness, decided at the factory, on a blade that dulls by the second bag of carrots.


One dial. Five cuts. Nothing to swap out.

The knob on the side is marked on two arcs. On the slicing side you get 3 mm, 6 mm and 9 mm, plus a closed position that shuts the blade away. Turn it round to the julienne side and a row of teeth rises up through the deck ahead of the blade, at 4.5 mm for matchsticks or 9 mm for fries.

That is the part worth understanding. The julienne combs live inside the body and stand up when you ask for them. There is no second blade to fit, no insert to line up, and nothing to put in a drawer and find again in March.

Cucumber at 3 mm. Gratin potatoes at 6 mm. Carrot matchsticks at 4.5 mm. Fries at 9 mm. All of it without putting the tool down.


Your hand never gets near the blade.

The guard is why people either use a mandoline or leave it in the cupboard. This one is a domed cap with a flat push knob on top, sized for the heel of your hand rather than your fingertips, and it straddles the rails so it can only travel where the food travels.

Underneath, a grid of molded nubs and a set of stainless steel spikes bite into whatever you have loaded, so half an onion does not spin as you push it. Two toothed clips at the edges hold long things square to the blade — a leek, a zucchini, a run of celery.


Sixteen inches of tool that still puts itself away.

At 16.3 inches it is as long as your chef's knife, and that length is doing something. It gives the food a long ribbed run-up, so it reaches the blade flat and travels straight through, and that is most of why the slices come out even.

Both wire legs fold in against the body when you are done, so it lies flat in a drawer or stands on end against the backsplash. Set the number once and stop checking the board.
