You already know fresh pasta is worth the trouble. What puts people off is the rolling — ten minutes with a rolling pin that ends in a sheet thick through the middle, thin at the edges and torn in one corner. This is the machine that part of the job belongs to.

No motor. No cable. Nothing to plug in. Clamp it to the counter, set the dial, and turn the handle.


Even sheets are the whole game

Uneven dough cooks unevenly and no sauce hides it. The thin edge is soft while the middle is still chalky, and you find that out at the table rather than at the stove. Two steel rollers set a gap and hold it across the full width of the sheet, so what comes out the far side is the same thickness at the corner as it is in the middle.

The dial on the end of the body moves that gap in numbered steps. Start at the widest, fold the sheet, pass it through again to work the dough, then come down a step at a time until it is as thin as you want it. Every sheet after that is the same one, which is the thing hand-rolling can never quite promise.


Ravioli without the guesswork

Filled pasta is the fiddly one. Lay out a sheet, spoon the filling along it, lay a second sheet over the top, then press around every parcel and hope you sealed them before they hit the water. Half of them open anyway.

The ravioli attachment does that in a single pass. Feed two sheets through with the filling between them and it comes out as a sheet of square parcels two rows across, pressed, sealed and scored ready to be broken apart. It fits onto the same machine and drives off the same handle.

Two cutters are built into the machine itself, at 2 mm and 4 mm, so the same sheet becomes spaghetti or a wider ribbon without swapping anything over. Left uncut, it is a lasagne sheet.


The part most people skip

A pasta machine has to be held down. Rolling dough takes real force, and a machine sitting loose on a worktop walks away from you — one hand on the crank, one hand feeding the sheet, and no hand left to hold the machine still. It is the single most common complaint about the cheap ones, and it is not a fault you can work around.

The bench clamp screws through the open base and grips the counter edge, and after that you are doing two things at once instead of three. The body, the rollers and the cutters are stainless steel, which both sources state and which is the reason it resists rust and survives being used every week rather than twice.

Set the dial, turn the handle, and dinner starts with a sheet you would be happy to serve.
