One tool cuts the foil, pulls the cork and opens the beer. It folds flat and goes in a pocket. So you open the bottle wherever you happen to be standing.

This is the folding opener a sommelier carries. One bar of stainless steel instead of three gadgets in a drawer.

No wings to line up. No motor to charge. Nothing left standing on the counter.

Three jobs, and nothing on it to run out

The foil goes first. Drop the ring at the tail over the neck and turn it once. A fine serrated edge inside the ring scores the capsule all the way around.

Then the worm, for the cork. Then the hook at the head, which lifts a crown cap just as happily.

Folded, it measures four and a half inches, with nothing standing proud of the body. It goes in the cutlery drawer, the picnic basket or a coat pocket. No cable, no battery, no motor to fail.

Why the opener in your drawer chews the cork

Cheap openers use a solid auger with a thick core. It bores a hole down the middle of the cork instead of gripping the length of it. On a young cork you get away with that. On an old one the middle tears out and the rest stays in the bottle.

The worm here is an open spiral you can see straight through. It winds around the cork rather than through it, so it holds the full depth of it in one piece.

There is no plastic anywhere on the tool either. The body, the lever, the worm and the ring are all the same polished stainless steel. Nothing on it can snap off, and no handle can work loose.

The second step is where the cork gives up

A single-hinge opener has one notch. You seat it on the rim and lift. It runs out of travel with the last third of the cork still in the neck. So you tip the handle over, re-seat it at an angle and finish by feel.

This lever is two hinged pieces, and each one carries its own notched step. The first step takes the cork most of the way out. The second drops onto the lip and finishes the lift with the tool still square to the bottle.

Nothing tips. The cork comes up straight, so it comes up whole. You set it down on the table in one piece and pour.
